Malolactic fermentation takes place partly in steel and is followed by an ageing process of one to two years in stainless steel barrels. Ageing in bottles for 6 months. ORGANOLEPTIC SHEET: Colour: bright, deep ruby red. Aroma: floral scent with notes of maraschino cherries and light shades of grass clippings. Spices, hide and tobacco complete the richness of the olfactory spectrum. Taste: rounded long contrasted taste with a fine shaped structure; net deep aftertaste. SERVING SHEET: Ideal serving temperature: 16-20° C. Pairings: ideal with complex dishes, moderate, as well as essential dishes or accompanied with more experimental plates, game, fish soap or tuna fish. Recommended Glass: The main characteristic of this glass is its large size. Its large body allows a proper oxygenation of red wines aged for a long time in bottles and with tannins that reached a milder state. The wide shape of this glass also prevents the decanting of wine, when possible, hence allowing an adequate oxygenation of wine while developing complex and tertiary aromas, concentrated at the narrow opening. The opening is tall and straight in order to direct the wine initially to the back of mouth; hence, favouring the concentration of aromas. |
